Peach Cobbler

I don't make Cobbler often because its such a personal item. Seems that most people make their cobbler different. This is how WE make Cobbler but remember food is the most fun when you add a personal touch.


6 peaches (about 5 cups) peeled cored and sliced 2 teaspoons of butter1/2 cup granulated sugar1/4 cup brown sugar1/4 teaspoon salt2 teaspoons cornstarch1 teaspoon lemon juice1/2 nutmeg1/2 cinnamon


Add the sliced peaches, dry ingredients to a saucepan and stir to combine.  Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.


1 cup all-purpose flour1/4 cup white sugar1/4 cup brown sugar1 teaspoon baking powder1/2 teaspoon salt6 tablespoons unsalted butter, chilled 1/4 cup boiling water In a large bowl, combine you pastry dry ingredients. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

I normally sprinkle sugar and cinnamon on top Bake at 425 until topping is golden, about 30 minutes.
