This is one of my easy Sunday dinners. I adore using my cast irons skillets and use they almost every dish but use what you feel comfortable with.
Ingredients
Okay, so the ingredients are a freestyle, meaning its all based on your taste buds Olive oil but some people use coconut oil or butter, pick what you like or do a combo
Marinade:
3 tablespoons olive oil
2 teaspoons garlic minced
4 tablespoons finely chopped cilantro stems and leaves
Onion sliced to taste
2 tablespoons lime juice
2 tablespoons lemon juice
1 teaspoon red chili flakes
1/2 teaspoon salt
1/2 cracked pepper (Make sure your chicken is feather free) I used a whole fryer but you can use this marinade on any piece of chicken
Instructions
Preheat oven to 375F Whisk all the Marinade ingredients together in a bowl. I place some Marinade under the skin, some inside and the rest I brush on top. Marinate for 15 minutes but best for 2 hours. Bake Chicken accordingly
